Stuffed Pistachio Dates

Soft dates, pure pistachio butter, rich dark chocolate and a sprinkle of crushed pistachios. It’s everything you love about the trend… but with a healthy twist (and zero added sugar).
Perfect as a treat after lunch, fuel before a workout, or that one last thing after dinner.

What You’ll Need
10 dates (soft & fresh)
10 tsp pistachio butter (100% pistachios, if possible)
50 g dark chocolate (70% or higher)
1 tsp coconut oil
Crushed pistachios, for topping
How to Make the stuffed dates
- Prep the dates.
Slice them open on one side and carefully remove the pit. - Stuff them generously.
Fill each date with a spoonful of pistachio butter. Be generous! - Melt the chocolate.
In a small bowl, melt the dark chocolate with the coconut oil until smooth and glossy (microwave or bain-marie both work). - Dip and top.
Dip each stuffed date halfway into the melted chocolate. Before the chocolate hardens, sprinkle with crushed pistachios. - Let them set.
Place on parchment paper and refrigerate for 1 hour until the chocolate is firm.
